BBQ Rub: I used our smoked chile peppers (Cañoncito & Nambe) and our housemade lemon sea salt and added white pepper I brought back while filming an episode on Vietnam, and added a touch of garlic powder. Using Maldon sea salt this rub is how I start a long day of smoking pork shoulder & ribs.

Taco Spice: Sometimes you need cumin! I've tried growing it many times (and failed each one) so after finding a great source from Burlap & Barrel I made a seasoning blend for when you're throwing fajitas on the grill or need to season chicken for enchiladas. Using a base of our smoked chiles and the wild cumin I added our Mexican oregano, garlic powder and Burlap & Barrel's toasted onion, hot paprika, and a touch of sun dried tomato powder for a hint of umami.
